Grilled Shishito Peppers with Lime Zest

1 pound (or a small bag) of shishito peppers

lime zest from half of one lime

olive oil

kosher salt


Toss peppers with a few tablespoons olive oil in a large bowl. Grill until peppers begin to blister. Sprinkle with lime zest and salt.
