Panzanella Salad

 

 

 

Ingredients:

 

4 cups ripe tomatoes, cut into large pieces

1 loaf day old Italian bread, cut into large pieces

1 cucumber, skinned and seeded, cut into large pieces

½ red onion, chopped fine

1 bunch fresh basil, torn

½ cup olive oil

Salt and pepper to taste

Preparation:

 

Combine all the ingredients and marinate, covered, at room temperature for 30 minutes. Mix well and serve. 

 

Serves 4
