5 oz. goat cheese, softened
1 cup green and black olives, chopped
⅓ cup walnuts, finely chopped
2 tbsp. thyme
3 tbsp. pimentos, chopped
1 baguette, thinly sliced and toasted
In a bowl, mix goat cheese, olives, walnuts, thyme and pimentos. Set aside.
Brush sliced bread with olive oil and toast lightly. Spread 2 teaspoons of goat cheese mixture onto each crostini and serve.
