12 strips bacon
26 beef tenderloin pieces
½ cup plain Greek yogurt
1 tbsp. prepared horseradish
1 tbsp. shallots, minced
¼ cup flat-leaf Italian parsley, chopped
Salt & pepper to taste
Preheat grill to medium high heat. In a small bowl mix, Greek yogurt, horseradish, minced shallots, salt, and pepper to taste. Mix well and set aside.
In a larger bowl add the beef tenderloin pieces and season with salt and pepper. Wrap each tenderloin piece with a small strip of bacon, place a toothpick through the bacon and tenderloin to hold in place.
Lightly spray grill with cooking spray and place bacon wrapped tenderloin pieces on direct heat, grill for 3 minutes per side. Remove from grill when bacon is crispy. Place on platter, remove toothpicks and sprinkle with parsley. Serve with horseradish sauce.
